Flyte of Yakitori Skewers (cooked over binchotan charcoal)
- tsukune (つくね), chicken meatballs
- (tori)kawa ((とり)かわ) chicken skin, grilled until crispy w/ scallop
- wagyu beef w/ maitake mushrooms and kelp salt
